Yummy Caramel Ring

Christmas Eve morning we had some caramel rolls that were absolutely wonderful. I'd heard of recipes for caramel pull-aparts where you use frozen dinner rolls and put them in a bundt pan, so I went in search of a recipe for an easy alternative to rolls for a morning when I don't want a lot of extra work. These worked perfectly and the family LOVED them. They made a lot--we're still nibbling on them--so they'd definitely feed more than a family of four!

Easy Caramel Ring

Ingredients:
1 pkg Rhodes or Bridgeford frozen dinner rolls (white works best)
1 pkg. regular (not instant) Butterscotch Pudding
1/2 cup brown sugar
1/2 tsp or more to taste cinnamon
Put rolls in bottom of bundt pan (I used some Pam on the pan first). Sprinkle dry pudding mix on top. Top with brown sugar and cinnamon. Cover loosely w/ saran wrap sprayed w/ Pam. Let rise overnight. Depending on size of your bundt pan, you may need to squash the rolls back down a little in the morning if they rise up over the pan. In the morning, melt one stick of butter and pour over rolls. Bake at 350 for 25-30 minutes. Once they are out of the oven, place a large plate upside down onto the pan and then flip the whole thing over, the rolls will come out of the pan easily. Best eaten warm, but work well as leftovers, too! :-)
